About the role

Join the culinary team of Mandarin Oriental Makati as a Commis Chef and support senior chefs in delivering world‑class dishes during the exciting pre‑opening phase of a new 5‑star hotel.

Key responsibilities

• Assist in the preparation, cooking, and plating of menu items under senior chef guidance.
• Maintain mise en place and ensure all stations are ready for service.
• Follow recipes and standard operating procedures to guarantee consistent quality.
• Uphold hygiene, safety, and sustainability standards at all times.
• Support stock rotation and inventory management within your section.
• Collaborate with kitchen colleagues to ensure smooth operations.
• Contribute to kitchen setup, equipment checks, and overall operational readiness for the hotel opening.

Required profile

• Previous experience as a Commis Chef or culinary trainee in a hotel or fine‑dining environment is preferred.
• Basic knowledge of cooking techniques and kitchen operations.
• Passion for food and a strong desire to learn and grow.
• Ability to work efficiently under pressure while maintaining attention to detail.
• Commitment to high standards of hygiene, safety, and food quality.
