About the role
The Specialty Chef will lead the Halal kitchen operations for the luxury hotels Raffles and Fairmont Makati. This role ensures that all Halal recipes are strictly followed, menus are executed to the highest standards, and the culinary team maintains impeccable hygiene and safety practices.
Key responsibilities
- Ensure all Halal standardized recipes are utilized and followed by the culinary team, and execute menus as directed.
- Adhere to Halal standards and guidelines in food preparation, production methods, and maintain sanitation, hygiene and safety standards.
- Monitor team productivity through training, coaching and mentoring.
Required profile
- Graduate of a degree in Culinary Arts or a related discipline (asset).
- Minimum of five (5) years’ experience in a luxury hotel and in Halal kitchen operations.
- Excellent leadership, communication and organizational abilities.
- Strong knowledge of food safety, sanitation and Halal food preparation methods.
