Production Manager

About the role

We are seeking a results‑driven Production Manager to lead daily operations in our high‑volume, HALAL‑certified central commissary. You will oversee the full manufacturing process—from raw material intake to dispatch—ensuring product quality, efficiency and food‑safety compliance.

Key responsibilities

• Develop and manage daily/weekly production schedules based on sales forecasts and store orders.
• Monitor yield rates, minimize food waste, and optimize line efficiency while enforcing SOPs.
• Maintain strict compliance with HACCP, GMP and local food‑safety regulations.
• Oversee sanitation protocols, cold‑chain maintenance and product quality checks.
• Lead, mentor and supervise kitchen supervisors, line leads and production staff.
• Manage labor scheduling, manpower allocation and performance evaluations.
• Collaborate with supply‑chain and warehouse teams to track raw‑material usage, stock rotation and control food and labor costs.
• Identify production bottlenecks, apply lean manufacturing principles and improve workflow efficiency.

Required profile

• Bachelor’s degree in any four‑year course.
• Minimum 5 years experience in commissary, commercial bakery or food‑manufacturing production management.
• In‑depth knowledge of food‑safety standards, production processes and equipment maintenance.
• Proven track record managing large production teams, conflict resolution and shift scheduling.
• Strong ability to track key production metrics and work in a fast‑paced environment.
• Excellent problem‑solving, organizational and time‑management abilities.
• Strong communication skills for cross‑functional collaboration.
• Willingness to supervise on a shifting schedule.
• Prior experience with high‑volume premium food production, cold‑chain logistics or bakery/dairy commissaries (preferred).
