About the role

The Chef de Cuisine – Chinese Production leads the Chinese kitchen team at Melco Resorts Leisure, ensuring the delivery of high‑quality Chinese culinary experiences across all hotel outlets. Reporting to the Executive Chef, this role combines culinary excellence with operational and financial stewardship.

Key responsibilities

• Assist the Executive Chef in the day‑to‑day management of the Chinese Production kitchen.
• Maintain and elevate the quality and presentation of all Chinese dishes served throughout the property.
• Control food, supply, energy, and utensil costs while seeking strategic purchasing opportunities.
• Communicate guest feedback and internal updates clearly to the culinary team.
• Train, develop, and motivate kitchen staff, fostering a professional and collaborative environment.
• Monitor labor and operational costs to meet financial targets.
• Adapt service to regular guests’ preferences, providing anticipatory service.

Required profile

• Extensive experience leading a Chinese cuisine kitchen in a hotel or resort setting.
• Strong understanding of food cost management and budgeting.
• Excellent communication skills and ability to work closely with senior management.
