About the role
The Shipboard Rotating Baker ensures the daily operation of the bakery shop on a cruise vessel, delivering high‑quality bread and bakery items for guests and crew while complying with strict food‑safety standards.
Key responsibilities
- Operate and control the bakery shop and production daily in line with company policies.
- Produce, present, and maintain the bread assortment for daily menus.
- Assist the Head Baker with production forecasts and record leftovers to minimise waste and control food costs.
- Set up bread displays across shipboard buffets.
- Apply and enforce United States Public Health (USPH) regulations, preparing for both announced and unannounced inspections.
- Maintain bakery cleanliness according to the Executive Chef’s schedule, using proper methods to protect equipment.
- Handle requisition and transport of supplies from main stores to the bakery.
- Ensure recipes, yields, and daily consumption recaps meet company standards.
- Support guest and crew inquiries and attend required meetings and training.
Required profile
- Minimum three years’ experience as a baker in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
- High school diploma or equivalent.
- Knowledge of proper cleaning techniques and bakery equipment use.
