Chief Baker – Cruise Ship (Fixed‑term)

About the role

We are looking for an experienced Chief Baker to lead the bakery team onboard our cruise ship. The role involves overseeing the production of bakery items for guests and crew, ensuring high quality, safety and compliance with company standards.

Key responsibilities

• Direct, supervise and assist the preparation of all bakery products onboard according to company standards.
• Develop daily work schedules, monitor performance, conduct monthly ratings and manage attendance for bakery staff.
• Implement food handling, cleaning and HACCP procedures in line with USPH standards.
• Control food costs by monitoring production, consumption and forecasts.
• Ensure proper storage, quality checks and receipt of bakery supplies.
• Collaborate closely with the Executive Chef to achieve high guest satisfaction scores.
• Maintain cleanliness of the bake‑shop, assign cleaning duties and report equipment issues.
• Conduct regular training on waste separation, environmental compliance and food safety.

Required profile

• 5+ years of experience in a 5‑star hotel, cruise ship or high‑profile restaurant bakery environment.
• Minimum 3 years in a supervisory role, preferably with a multicultural team.
• Experience managing high‑volume production of at least 500 meals per service.
• Strong leadership, communication and team‑building abilities.

Required skills

• Accredited advanced food safety certification.
• Extensive knowledge of VSP (Vendor Service Program) preferred.
• Proficiency with kitchen machinery and knife safety.
• Familiarity with USPH standards and HACCP procedures.
